My (free) MultiScreener software might be close to what you're looking for,
although it requires a Macintosh instead of standalone box. It's certainly
better than a hacked AppleTV or something like that. It will run fine on a
Mac Mini, and it will keep multiple players in sync over a network. It can
be told to auto-start when the computer turns on, for unattended gallery
use.

For non-sync video box applications I've also been playing with DVD players
that have built-in card readers, and crappy digital picture frames that
play video. (They play MPEG4 video directly from the memory card.) If
anything comes of it, I'll post to the list.
