Just buy a cheap analog-to-digital converter and capture it in Final Cut or iMovie. Then output to DVD yourself (in DVD Studio Pro iDVD). Or if you want to be cheap & have a digital video camera, you can likely just record straight to that to save yourself the A-to-D box costs. (That just adds an extra step, since you won't be able to capture straight to your hard drive.) No need for a lab or a specialist...
